At GOURMEY, you will report directly to Marion Gaff, Team Lead of Food Science and Analytical Chemistry, and will join a team of 7 gourmates. What will you be responsible for? As an analytical chemistry scientist, you are responsible for analytical studies requiring the identification of volatile and non-volatile organic compounds present in samples including but not limited to raw ingredients, food prototypes, cells, media, etc. You will: Contribute to designing analytical strategies in collaboration with different workstreams (food science, food pilot, media development…) to address the company objectives and challenges.Set up and optimize consistent methods for the extraction, identification, and quantification of targeted and untargeted compounds such as aroma compounds, small molecules, peptides, proteins, and other biomolecules. Apply the validated methods on different samples (foods, ingredients, cells, medium, etc.)Ensure consistency in sample preparation, data gathering, data analysis, and interpretation to draw robust conclusions.Maintain comprehensive electronic records for all analyzed samples, including details of sample preparation, the analytical method employed, and the obtained results. Propose hypotheses to elucidate the findings and outline subsequent steps for testing these hypotheses. Communicate all findings to ensure the progression of the product and the media development during weekly meetings. Ensure scientific report writing to build knowledge and protect Gourmey’s IP.Manage, maintain, and operate lab equipment, in particular sophisticated analytical instruments (HPLC-HRMS, GC-MS/MS-O), ensuring their calibration and performance. Identify and troubleshoot issues related to analytical methods, instrumentation, or data interpretation to maintain the reliability and accuracy of analytical results.Manage laboratory supplies and chemicals: track inventory, order necessary materials and equipment, and ensure that the laboratory has an adequate supply of consumables for analytical procedures.Degree in Analytical Chemistry: M.Sc. degree with 3 years experience minimum or a Ph.D. degreeExcellent skills on the analysis of volatile and non-volatile food constituents in the field of flavor sciences (odor, aroma, and taste active compounds), peptidomics, proteomics and metabolomics. Proven practical experience in extraction techniques as well as in the identification and quantification of organic molecules using GC-MS(-O) and LC-HRMS.Software skills for analytical data acquisition and processing including statistics to interpret complex data sets (MassHunter, TraceFinder, Compound Discoverer, Proteome Discoverer, Xcalibur, XLStat…)High organization skills to generate multiple accurate and timeline analytical data.Comfortable using online collaborative tools (Google Docs / Slack / Electronic laboratory notebook / Zoom, Notion etc.)Passionate about GOURMEY’s mission to bring to market delicious and sustainable foods through innovation: Team player spirit with a sense of strong work ethic and responsibilityFluent English, both written and spoken.
